Chicken Briyani (My moms' Style)



Biryani is a mixed rice dish from the indian cuisine and is made with spices, rice and meat or vegetables.. Making biryani can never get easier than this. I love Briyani and make them more often than anything else. How to make chicken briyani in simple way and this recipe is perfect for home preparation...

It is very easy even a beginner can made it simple and try it without any trouble. It well goes with onion raita and any chicken side dish...onion Chicken fry, Dragon chicken, Chicken 65 , Garlic chicken..... This briyani is one of the tried and tested recipe of so many decades. Because i have made this more times than i remember. 


It is a special briyani to post in my blog because it made in my mom kitchen and this briyani is prepared my mom with help of me amd my sister and we serve with all family members that is memorable memories for me....

INGREDIENTS :


Chicken with bone - 3/4 kg (cut into medium pieces)

Seeraga samba rice - 3/4 kg (soaked rice for 20 mins)
Bay leaf - 2 
Ghee - 100 ml
Coconut oil - 50 ml
Onion - 250 grams (sliced)
Tomato - 350 grams (sliced)
Green chilli - 6 (sliced)
Ginger garlic paste - 3 tbsp (coarsely ground)
Onion paste - 2 tbsp (coarsely ground)
Chilli powder - 2 tbsp
Coriander powder - 2 tbsp
Cumin powder - 1 tsp
Garam masala powder - 2 tsp
Curd - 3 tbspn
Coriander leaves - few (chopped)
Mint leaves - few (chopped)
Coconut milk - 1 3/4 cup (according to your rice varieties)
Salt - as needed

METHOD :


  • Wash and soak the rice for 20 mins and keep aside.
  • Heat ghee and oil in a briyani pot add in bay leaf saute it well in the oil.
  • Now add in sliced onion, a little amount of salt and toss it well untill it get became transparent. 
  • Now add in fresh ginger garlic paste, saute it well in the oil 
  • Now add in garam masala powder, onion paste and saute till the raw smell goes off.
  • Then add in chilli powder, coriander powder, green chilli,  chopped tomatoes and add some salt to cook.
  • Then add chopped coriander and mint leaves and saute it well untill the are mushy.
  • When the oil seperated from the gravy add in chicken pieces saute it well in the masala.
  • Add some spoon of curd and give a mix and allow the chicken to cook well...
  • Cover it with a lid and cook. When the chicken is half cooked, 
  • Now add in soaked rice and mix well in the masalas and then add in coconut milk and mix well.
  • Now add in salt and give a mix (check wheather the salt chilli are correct)
  • Cover the lid and let them to boil for 6 - 7 mins. Now slowly open the lid and mix well.
  • Again cover the lid not to escape the vapour from it and cook it on low flame untill the water drain off, but make it sure not burn the rice.
  • Kept it for 20 mins and now open the lid and fluffy it lightly.
  • Now the yummy chicken briyani is ready to serve...
  • Serve it with raita...

NOTES :

  1. First fry the onion in the slow flame till it became light brown.
  2. Put the masalas one by one and fry it well in the oil which gives aromatic smell to the briyani
  3. Toss well the chicken in the masala, so that the chicken absorb the spicyness in and it became tender.
  4. When the chicken is half cooked add rice, so the chicken is very soft in each and every bite.
  5. Coconut milk is measured correctly (1 cup rice = 1 3/4 cup).
  6. When the briyani is ready give a gentle mix and cover it with lid. and should open the lid after 15 mins....
  7. Which gives excallent flavour to the briyani.....

PICTORIAL :



Soak the rice for 20 mins
Cut your veggies
Heat oil and ghee in a pan
Add bay leaf
Onions and little amount of salt
Toss well till it transparent or light brown in colour
Add ginger garlic paste
Toss well in the oil
Add garam masala powder
Onion paste
Chilli powder
Coriander powder
Toss well and add in green chilli
Add tomatoes, coriander and mint leaves
Toss well 
When the oil seperated from the masalas
Add chicken pieces
Add curd
Toss well in the oil and 
cook for 15 mins in slow flame
Now add in soaked rice
Prepare your coconut milk 
and i add some water also
Fry the rice in the masala
Add coconut milk
Add salt
Give a mix
Cover it with lid
Open the lid, When it rollboil 
Cook it low flame till the water evaporate
Again give a mix
Make sure not to burn the rice in the bottom
Now it is done
Serve hot with raita
Chicken is tender in each bite
