Elephant yam fry / senai kizhangu poriyal is my hubbys favourite recipe. But i make it very rarely because my son doesn't like it. Many poople doesn't like it as it gives a itchy feel in your tongue while eating. But when properly cooked, it can be eliminated. I made this recipe some more traditional and adapted the recipe to suit my taste buds.
Yam fry is goes well with all kinds of sambar and a best sidedish for lunch recipe... I made this last week and it is very very simple recipe and turns out great taste wise. I post senai kizhangu sambar also, check out Elephant yam (senai kizhangu ) sambar too....

INGREDIENTS :
Elephant yam - 1/2 (cut it into small pieces)
Water - 2 cups
FOR SEASONING :
Coconut oil - 1 1/2 tspn
Mustard seeds - 1 tspn
Urad dal - 1 tspn
Small onions / shallots - 4 (chopped)
Curry leaves - few
Turmeric powder - 1/2 tspn
Grated coconut - 1/2 cup
Salt - as needed
FOR MASALA :
Red chilli - 5
Garlic - 2 cloves
Cumin seeds - 1/4 tspn
Shallots - 5 - 7 (small)
METHOD :
- Grind the grinding items into paste.
- In a kadai add chopped yam, water and cooked it untill it became soft.
- And drain the water and keep cooked yam aside.
- In another kadai add oil, mustard, urad dal, chopped small onion, curry leaves.
- Fry them for 2 mins untill they get brown, and add grinded masala, turmeric powder, salt
- Toss them in oil for 2 mins, and add in cooked yam and again toss them.
- Now add fresh grated coconut and toss them.
- It's ready to serve..
PICTORIAL :
Take you masala ingredients
Add them to the blender
Grind it into paste
Chopped yam and wash well
Drain the water
Now add to pan and some water
Bring to boil
Drain it
Heat a pan with mustard and urad dal
Some chopped shallots
Some curry leaves
Turmeric powder
Masala
And coconut
Little bit of salt
Now add cooked yam
Toss well for 5 mins
Now it's ready
Serve and enjoy..
