Restaurant Style Sweet Corn Veg Fried Rice


Fried rice is our family favourite... Hubby can have fried rice even daily... He is crazy after fried rice and he his staple order in restaurants will be egg / veg fried rice..... My son naveen loves any fried rice so its one of the ways i sneak in all the veggies.. When i packed fried rice for naveen lunchbox I skip the sauces and make it simple more with indian flavours so wanted to post this easy fried rice recipe...


I usually cut all veggies in previous night itself while watching TV so making fried rice became easy for me... I don't watch serials but this is mahabharatham in Vijay tv now so am regularly watching it... Sidedish recipes which pair well with fried rice :

INGREDIENTS :

Basmati rice - 1 cup
Sweet corn kernels - 1/2 cup
Carrot - 2 (small finely chopped)
Garlic - 1 tbspn (finely chopped)
Onion - 1 (finely chopped)
Capsicum - 3 tbspn (finely chopped)
Pepper powder - 1/2 tspn
Salt - as needed
Butter - 2 tbspn
Oil - 1 tspn
Coriander leaves - few (chopped)

METHOD :

  • Cook the basmati rice, spread it in a palte and fluff it up with fork add a tspn of oil and mix well.
  • Heat a pan with butter, add in chopped garlic and toss well...
  • Then add in chopped onion and capsicum, toss well in the butter..
  • Now add in carrot, beans in medium flame, fry till the veggies shrink and raw smell leaves..
  • Then add in sweet corn along with the veggies and mix well.
  • Add in pepepr powder and required salt.. stir well in medium flame till the veggies cooked..
  • Add cooked rice and give a quick stir. Then add some fresh coriander leaves and off the stove..
  • Serve hot with your choice of sidedish or any manchurian.

PICTORIAL :



 Heat a pan with butter
 Add some chopped garlic
 Toss well in the butter
 Add in onion and capsicum
 Toss well
 Now add in all veggies
 Add some corn kernels
 Give a mix
 Now add in salt
 Some pepper powder
 Toss well in the butter
 Now it's cooked
 Then add in cooked basmati rice
 Some coriander leaves
 Give a mix
 Serve hot
