Crispy fried chicken


Crispy fried chicken is a standard dish in the cantonese cuisine of southern china and hongkong... An excellent recipe for technique as much as anything, as the few coating ingredients of rice flour, maida, corn starch are not difficult to combain! Seriously the best, easiest , crispiest fried chicken recipe ever encountered, this method of frying chicken will not disappoint. 


Fried crispy chunchy chicken is one of those foods that makes everyone hungry. If you fry it in low temperature of the oil will drop and your chicken would cook evenly... Season carefully the chicken with every step of the way...That gives great craggy crust to chicken in each bite....



Use coconut oil that gives excellent smell to the chicken. And the important thing is make the sauce first and add fried chicken to the sauce and serve immediately...It should made within 15 mins, the chicken is fried in such a way that the skin is extremely crunchy, but the meat is really soft.... Trust me the classic fried chicken is sure to be a family favorite...

Preparation time : 10 mins
Marination time : 30 mins
Cooking time : 15 mins
Serve - 4 

INGREDINTS :

Boneless Chicken - 1/2 kg (cut it into strips)
Coconut oil - for frying

TO MARINATE :

Ginger garlic paste - 1 1/2 tspn
Chilli powder - 2 tbspn
Red food colour - 1 pinch
Rice flour - 2 tbspn
Corn starch - 2 tbspn
All purpose maida - 2 tbspn
Salt - as needed

FOR SAUCE :

Butter - 1 tbspn
Onion - 1 ( chopped)
Red chilli sauce - 2 tbspn
Tomato sauce - 2 tbspn 
Cilantro - few (chopped)

METHOD :

  • Mix all the ingredints given in the " TO MARINATE" in a mixing bowl and mix well.
  • Now add in chicken strips and mix well and let it marinate for 30 mins.
  • In one stove heat a pan with oil and fry the chicken in high flame till it cooked and crispy...
  • In another stove place pan with butter add in finely chopped onions and fry around 4 mins.. 
  • Then add in red chilli sauce and tomato sauce and saute it well.
  • Now drain the chicken in the oil and put dirrectly into the sauce pan and mix well.
  • Garnish with chopped cilantro and serve immediately...
  • Now the best appetizers is ready to enjoy...


PICTORIAL :

Take a mixing bowl add in ginger garlic paste
Salt
Add in chilli powder 
Now add in maida
A pinch of red colour
Corn starch
Add in rice flour
Now add in chicken strips
You sprinkle some water to mix but it should be in this consistency
Marinate it for 30 mins
Fry it in oil till crispy

Like this
In another pan add butter to melt
Add in chopped onion
Fry till transparent
Add in red chilli sauce
Add in tomato sauce
Mix well 
Now add in crispy chicken
Toss evenly
Add in chopped coriander leaves
Done 
Garnish with some sliced onions
Enjoy...
