Dhaba Style aloo parathas is a simple, easy with a stepwise picture.. which is a popular dish in punjab named as Punjabi aloo parathas / Dhaba style aloo parathas taste slightly spicy, tangy and has a hint of sourness..
Potato filling makes a big different in flavour and tasing of parathas... I also added chat masala which percks up the flavour.. The tawa should be hot while cooking the parathas with ghee or oil and the parathas must be cooked properly while you see the crispy brown spots on the top of the parathas...

INGREDIENTS:
FOR DOUGH :
Wheat flour - 2 cups
Salt to taste
Oil / Ghee - 1 tbsp
Warm water - as needed
FOR FILLING :
Potato - 3 (large boiled and mashed)
Green chilli - 1 (chopped)
Chilli powder - 1 tspn
Ajwain / Omam - 1tspn
Amchoor Powder - 1 tspn
Chat masala - 1 tspn
Salt to taste
METHOD:
- In a mixing bowl add wheat flour , ghee, salt and rub well.
- Pour in warm water and knead it with your hands to form a soft dough.
- Cover it with a lid and leave it for 15 mins.
- And then for filling, mix all the ingredients together in a bowl and make it a soft dough, set this aside.
- Take a small portion of dough ball and make it a small circle..
- Spoon some filling spread it all over the dough..
- And cover it with another dough circle and join together.
- Lightly sprinkle some wheat flour and roll the parathas into a big circle..
- Cut the excess edges of the parathas..
- Heat a tawa and fry this paratha by applying oil or ghee on both side till golden at low flame.
- When the parathas has brown spots on it.. flip it and cook on both sides..
- Remove it to a plate and serve hot....
- Enjoy..
PICTORIAL:
Take wheat flour in a wide bowl
Add some ghee
Little bit of salt
Rub it with your hands
Add in little warm water
Mix well with your palms
Knead it well
Now the dough is ready
Cover it with a bowl, rest for 15 mins
Take all the ingredients for filling
Take boiled potatoes in a bowl
Mash it well
Add in salt
Chopped green chillies
Some chilli powder
Amchoor powder
Chat masala powder
Add in ajwain
Now mix well
To form a soft dough
Take the dough and knead again
Make small balls out of it
Take a one portion of dough
Flatten it to a circle
Make another one and keep aside
In a one parathas, spoon some filling
Spread it well
Cover it with another parathas
Press the edges
Now it's done
Roll slowly and dont make too thick or too thin
Now it's done
Cut the edges
Now it's done
Place it on the hot tawa
Sprinkle some oil and flip it
Again sprinkle some oil
See how it's puff
Cook well on both sides
Press the sides and cook well
Now it's done
Serve hot
Best match with pickle or curd
