Lemon rice is very popular delicious south indian variety rice which is simple to make...you can easily put all the ingredients together and add cooked rice and mix well evenly, when you are hurry... Best is to served lemon rice with Pappadam or Chips or Potato fry...

INGREDIENTS:
Boiled rice - 1 cup (I add little bit of turmeric powder while cooking)
Lemon juice - 4 tbspn
Mustard seeds - 1 tspn
Urad dal - 1 tspn
Bengal gram / kadalai paruppu - 2 tspn
Ground nut -1 tspn
Green chillies -7 (chopped)
Asafoetida - 1 pinch
Salt - as needed
Curry leaves - few
METHOD:
- First boiled the rice with a 1/2 spoon of turmeric powder..
- Allow to cool completely..
- In a pan add oil, when it heat add in mustard,urad dal, allow to splutter.
- Then add bengal gram and roasted ground nut and fried it for 2 mins..
- Now add in chopped green chillies and curry leaves..
- Then add a pinch of asafoetida on it, and Mix well.
- Now slow your flame and carefully add in lemon juice, salt and mix well.
- Atlast add boiled rice (rice boil with turmeric powder) which i have prepare first..
- Now fluff it carefully..then serve..
- I match it with Spicy potato fry..
PICTORIAL:
Take oil in a wide pan
Add mustard,urad dal
Add in bengal gram,ground nut
Add few curry leaf
Now add in chopped chilli
A pinch of asafoetida
Then lemon juice and salt..
Add in boiled rice
Fluff it together with tempering items..
