Avial is a delicious perparation made with mixed vegetables, coconut masala, and few temper items with coconut oil.. The masala with fresh grated coconut makes the recipe more aromatic.. This is a stable food in my house when we make pulli kuzhambu.. Avial is a originated from kerala but gained top place in tamilnadu as well. It is a one of the main dish in south indian wedding meals menu..

INGREDIENTS:
Carrot - 2 nos
Beans - 4 nos
Raw banana / Valakkai - 1 (peel the skin and chopped)
Brinjal - 4
Broad beans / Avaraikai - 3 nos
Elephant yam - 50 grms (peel the skin and chopped)
Drumstick / Murungakkai - 1 (but it's unseason)

Raw mango - 1/4 (sliced)
Potato - 1nos (peel the skin and chopped)
Siru kizhangu / Chinese potato - 3 nos (peel the skin and chopped)
Salt - to taste

Coconut oil-4spn
Mustard seeds-1 spn
Urad dal-1spn
Shallots / Small onion - 2 or 3 (chopped)

Curry leaves - few
FOR GRINDING:
Green chilli - 2 nos
Fresh grated coconut-1 cup
Cumin seeds - 1tspn
Garlic - 1Cloves
Shallots / Small onions - 8
METHOD:
- Take all the vegetables and wash well and cut them in lenthwise..
- Take all the prepared vegetables in a thick bottom pan..
- Add some salt,coconut oil and a cup of water..
- Now close the lid and leave it 10 mins till the vegetables cooked.
- Inbetween gap take a blender and take the masala ingredients and make it a coarse paste, keep aside..
- Open the lid and give it a mix and then add masala paste..
- Mix well till the raw smell is goes and they combain well with the veggies..
- Off the stove low flame for 5 mins..
- Meanwhile heat a pan with some coconut oil and in mustard seed, allow to crackle.
- Add in chopped shallots or small onions and curry leaves..
- Now add them to a prepared avial and mix well.
- Atlast add in grated fresh coconut and mix well.
- The yummy avial is ready, serve hot with kuzhambu.

Covered it and cook
Take grinding things in a mixer
Make it a coarse paste
Now done, keep aside.
Now the vegetables half cooked
add the masala on it
When all are combained, add some coconut
Mix well kept it for 5 mins
Take another pan
Make your tempering items
Fry till golden
Now add in to the avial
Mix well
