Mint Rice / Pudina Rice




Mint Rice /  Pudina Rice is a south indian recipe made with fresh pudina or mint leaves.. It pair wounderfully well with any simple curry and it is a yummy flavorful dish for the lunch. It can be prepared by simple method.. Pudina rice can be packed for the lunch box too with a simple vegetable stir fry... 




Mint is also called as pudina in varoius indian languages is often used to flavour chutney, indian curries and especially in briyani..  It is super easy to make, much easier than any briyani or any other rice items...

INGREDIENTS:


Cooked rice -1 cup (you can also use basmati rice)

Ghee - 3 tbspn
Fennel seeds - 1/2 tspn
Cinamon sticks - 2 (small)
Cashew - 10 nos
Onion -1 (sliced)
Green chilli - 4 (slit)
Ginger garlic paste - 1spn 
Salt - as needed

FOR MASALA :


Fresh mint leaves - hand full

Green chilli - 3
Coriander seeds - 1 tbspn

METHOD:



  • Cook the rice and set aside to cool completely..
  • Then make a masala given in the list " FOR MASAL" into a smooth paste.. keep aside.
  • Heat ghee in a pan, add in spices allow to sizzle..
  • Then add in cashew and fry it for 2 mins..
  • Add in sliced onions and chillies, fry it till brown..
  • Add in ginger garlic paste and toss well.
  • Now add in pudina masala and salt, toss along with the onions..
  • Cook it for 5 mins till the oozes out..
  • Then add in cooked rice and mix well..
  • Mix it evenly and serve hot..
  • Enjoy..

PICTORIAL:


 Take all your ingredients
 In a blender add in fresh mint leaves
 Green chillies
 Add in coriander seeds
Make it into paste, keep aside.
 Heat a pan with ghee
 Add in spices
 When it sizzle, add in cashew
 Toss well
 Add in sliced onions and chillies
 Toss till transparent
 Now its done
 Add in ginger garlic paste
 Fry it for 2 mins
 Add in masala 
 Then add in salt
 Allow to cook for 5 mins
 When the oil oozes out
 Add in cooked rice
 Mix well
 Fluff it carefully
 Now it's done
 Transfer it to a plate
 Serve hot
