Masala dosa is a very famous recipe not only in south india but all over the india too... Though making masala dosa is a simple process, but its worth high.. This simple delicious dish originated from south indian cuisine especially in tamilnadu..
The masala in the dosa is nothing but simple potato subzi. There are different variation of preparing it, but usually I make this way which is suitable for my family.. You can also use ghee instead of oil while making masala dosa which make more flavorful..

INGREDIENTS :
Idli, dosa batter - as needed
Oil - 3 tspn
Mustard seeds - 1 tspn
Ginger - 1 tspn (finely chopped)
Urad dal - 1 tspn
Boiled potato - 4 (mashed)
Onions - 2 (chopped)
Green chilies - 5 (chopped)
Tarmaric powder - 1 tspn
Coriander leaves - few (chopped)
Salt to taste
Water as needed
FOR POWDER :
Roasted bengal gram / pottu kadalai - 11/2 tspn
Urad dal - 1 tspn
Boiled potato - 4 (mashed)
Onions - 2 (chopped)
Green chilies - 5 (chopped)
Tarmaric powder - 1 tspn
Coriander leaves - few (chopped)
Salt to taste
Water as needed
FOR POWDER :
Roasted bengal gram / pottu kadalai - 11/2 tspn
METHOD :
PICTORIAL :
- First roasted bengal gram to the blender and make it into fine powder.
- Heat oil in a kadai. Add in mustard seeds,urad dal and allow to crackle
- Add onions, ginger and green chillies toss them well,
- Now add mash potato, salt, tumaric powder one by one.
- Add mix it well now add some water and mix well.
- Now add powdered roasted gram and again toss well.
- Then add in chopped coriyander leaves.
- The masala is ready for the dosa.
- Now heat a tawa, once it heat add a ladle of batter to it .
- And spread it like dosa and add oil, when its cooked
- Turn over the dosa and cooked. Now again turn the dosa.
- Now spoon the masala fillings on the top of the dosa....
- And then fold the dosa as shone in the pic.
- Serve.. Enjoy..
PICTORIAL :
Take bengal gram
Add to the blender
Grind it, keepaside
Take dosa batter
Take your ingredients for masala
Add oil in a kadai
Add in mustard, urad dal
Add all the veggies
Toss well it became transparent
Add mash potato
Add in turmeric
Salt
Add some water and mix well.
Add in powdered gram
Now masala are ready
Atlast add chopped coriander.
Transfer it into sbowl
Pour a ladle full of datter
Spread it
Turn over it
Again turn it and heat it for very low flame
Spoon a masala on it
Spread it on the half of the dosa
Fold it with other side of the dosa
Serve it with chutney
Enjoy...
