Chola Masala Recipe



We had this masala with chola puri and we make chola masala often because every one in my house loved it......Never do with store bought Chola masala powder. I always use the spices which are available in my house, which give traditional taste to the dish.. 



It is a served with famous punjabi dish called bhature and we often prepare it at our home, But i served with chola puri, lemon wedges and sliced onions...Coming soon i post Bhature recipe...  So try this at your home and let me tell how it is comes out from you.....

Preparation time : 20 mins
Cooking time : 30 mins
Serve : 3 to 4

INGREDIENTS :

Cinnamon - 3 small sticks
Onion - 2 (chopped)
Tomato puree - 1 cup
Ginger garlic paste - 1 spn
Kasuri methi / dried funugreek leaves - 2 tbspn
Salt - to taste
Coriander leaves - some chopped
Oil - 2 tbspn
Lemon - 1/2

FOR BOILING CHANA :

Chana / kabuli chana / chickpeas - 2 cup
Salt - 1 tbsp
Water  for boiling

FOR MASALA :

Cinnamon / pattai - 2 small sticks
Cloved / krambu - 3
Whole pepper / mulu milagu - 1 tbsp
Cumin seeds - 1 tsp
Coriander seeds - 1 tbsp
Dry red chilli - 5

METHOD :

  • Soak chana over night or up to 8 hours. Drain it and add to the pressure cooker with salt and cook it for 4 whistle.
  • Then turn off the heat, lets the steam go all by itself. now open the cooker and set aside.
  • Now start by making masala... dry roast all ingredients given in the list till nice aroma comes. remove it to a plate and allow it to cool down and grain it into fine powder.
  • Heat 2 tbspn of oil in a pan. Add cinnamon, onion, ginger garlic paste, and fry it till golden.
  • Now add in tomato puree  and saute it for 5 mins.
  • Add the ground masala and mix well 
  • Now add 3/4 cup of cooked chana to that and 1/4 where remaining in the plate itself.
  • Add salt and kasuri methi leaves and saute well untill the masala were well mix with the channa.
  • Now add 1/4 cup of cooked chana to the blender and make it into fine paste.
  • Add some water to the gravy and bring this to a boil 
  • Simmer it for 15 mins untill oil floats on top.
  • Garnish with cilantro / coriander leaves and serve hot with chola puri 
  • That is the big size puri which i have made it for you.

PICTORIAL :


Take chana in a bowl
Add in water
Soak over night
In a cooker add in soak chana and water
Salt
Close the cooker and whistled it for 4
Chana is cooked
Till soft
Drain it
Ingredients you need for roasting
Start roasting till it colour change
Now put in a blender
And powder it.. and the masala is ready
Take all your ingredients
Heat oil
Add in cinnamom
Chopped onion
Ginger garlic paste
Toss them till brown
Add in tomato puree
Then your masala powder
Toss well
Add in 3/4 cup of cooked chana 
Remaining chana 1/4 in the plate
Add kasuri methi
Season with salt
Toss well
Add channa to the blender
Grain it
Add that in to the gravy
Add some water
And cilantro mix it evenly
And a squeeze of lemon
Mix well ....DONE
