Karupatti paniyaram is a traditional sweet made during festive seasons using in southern india especially in tamil nadu. In this recipe for sweetness karupatti vellam is used instead of sugar. (I don't use sugar on it) Karupatti is made from the sap extract of palm trees.
The process of making palm jaggery, does not involve any chemical agents. so use in your daily routine for a healthy living. So try this recipe at home and comment about that how it's comes out perfect....

INGREDIENTS :
Appam batter - 1 cup (click this recipe)
Palm jaggery / Paanai karupatti / cane sugar - 1/2 cup
Cardamom powder - 1/2 tspn
Grated coconut - 1 cup
Sugar - 1/4 cup
Oil - as needed
METHOD :
- In a bowl add appam batter, cordamom powder, coconut, and mix them well.
- Grated the the palm jaggery and add it to the fermented datter.
- And mix it well. Now heat the paniyaram pan and add 1 tsp of oil into each holes.
- Pour the batter in each hole and allow to cook in the medium flame.
- Turn on the other side using a tooth pick or a stick.
- Allow to cook till both sides turn golden brown colour. serve hot.
PICTORIAL :
I used this palm jaggery from my village
Now take your ingredients but sugar is optional
In a bowl add appam batter and cordamom powder
Add in coconut
Then add palm jaggery
Now beat it well
Now the paniyaram batter is ready
Heat a paniyaram pan
Add oil in all the holes
Pour the batter
In each hole
Again add in oil
Turn on the other side with help of sticks
