But kitchen is my world and I started this blog by pressure of my friend Arthi (Yummy Tummy), lots of thanks arthi (da) and I have no words to explain my happiness.... INGREDIENTS :
Cinnamon / pattai - 2 small pieces
Bay leaf - 1
Clove - 2
Green gardamom - 2
Onion - 2 (sliced)
Green chilli - 5 to 6 (slit)
Chilli powder - 1 tspn
Turmeric powder - 1/4 tspn
Coriander powder - 1 tspn
Cumin powder - 1/4 tspn
Garam masala powder - 1 tspn
Ghee - 5 tbspn
Salt - as needed
Saffron threads - few (crushed)
Milk - 2 tbspn
Coriander leaves - few (chopped
Mint leaves - few (chopped)
VEGETABLES :
Tomato - 2 (sliced)
Carrot - 1 (sliced)
Potato - 1 (chopped)
Beans - 7 (chopped)
FOR GRINDING :
Coconut - 1/4 cup
Ginger - 3 pieces
Garlic - 4 cloves
Cashew - 5 nos
Shallots / Small onion - 10 nos
METHOD :
- First cook the basmati rice and keep aside
- Grind the grainding items into fine paste. keepaside..
- In a small bowl take some warm milk and add in saffron threads and mix well, keep aside..
- In a pan add ghee and whole spices..
- Add in onion and chillies and toss till they transparent..
- Now add in masala paste and mix well.
- Once they mix well add in spices powder and mix along with the onions..
- Now add in tomato and salt, toss well. Till raw smell is gone.
- Add in vegetables and some water, mix well.
- Once they mix and bring to boil, cover it with lid and cook for 5 mins..
- Then open the lid and add in cooked basmathi rice and spread it evenly..
- Add in saffron milk, top of the rice, and sprinkle some chopped coriander and mint leaves..
- Let's it steam for 10 mins at very low flame, off it and don't open it for 10 mins.
- Now open it after 10 mins and fluff the rice (lightly)carefully.
- Yummy and delicious, veg dum briyani is ready to serve.
- Enjoy..
PICTORIAL :
Take all your ingredients
Take grinding ingredients
Add them to the blender
Make it a fine paste
Heat a pan with ghee
Add in whole spices
Add in sliced onions and chilli
Toss till transparent
Add in masala paste
Give it a good mix
Add in spices powder
Mix it well
Now add in chopped tomatoes
Add in salt
Give a stir
Add in vegetables
Add some water
Mix it evenly
Cover it with lid and cook for 5 mins
After 5 mins the water little evaporate
Now add in cooked basmati rice and spread it
In a warm milk add saffron
Give it a mix
Pour over the briyani and
sprinkle some coriander and mint leaves
Look the colour (mumm)
Cover it with lid and slow cook it for 10 mins
Open the lid and fluffy it lightly
Now it's done, yummy
Transfer them to a plate
Serve hot
