Ennai Kathirikkai Pulli Kuzhambu


Brinjal is very low in calories and fats, but rich in soluable fiber content. Ennai kathirikkai puli kuzhambu is a simple and delicious recipe which you can make it for lunch. The brinjal is nicely blends while toosing in gingelly oil and cooked in masala gravy, which gives soft texture while having..  


It is one of the yummiest gravy among the south indian kuzhambu variety. So I hope that you must try this recipe and let me know it's turns out from you...

INGREDIENTS :

Gingelly oil - 4 tspn
Mustard seeds - 1 tspn
Turmeric powder - 1 tspn
Tamarind - a small lemon size (soaked in water)
Brinjal / Kathirikkai - 12 nos (very small)
Salt - to taste
Shallots / Small onions - 4 (chopped)
Curry leaves - few

FOR GRINDING :

Coconut - 1/4 cup (grated)
Shallots / small onions - 7 nos

Dry roast :

Red chilli - 15 nos
Pepper - 1tbspn
Coriander seeds - 1 1/2 tbspn
Sesame seeds - 2 tspn
Cumin seeds - 1/2 tspn
Garlic clove - 2
Mustard seeds - 1/2 tspn

METHOD :

  • Wash the brinjal and make it deep slices on it.. keep aside..
  • Dry roast the spices and cool it for 5 mins.
  • Now add to the blender and grind it into fine paste. 
  • Add in shallots and coconut to the blender grind it into fine paste and keep aside.
  • Soak tamarind in 1/4 cup of warm water and extract pulp.
  • Wash brinjals and remove their stems. cut it as shown in the picture.
  • Heat oil in a pan, add cutted brinjals and toss it in slow flame.
  • Now in a bowl add grinded items, turmeric, salt and the turmarind extract mix and keep aside. 
  • Heat gingelly oil in a kadai, add mustard seeds, allow to splutter add chopped onions, and curry leaves, saute for a min.
  • Now pour the masala mixture and bring to boil, add cooked brinjal to the gravy, simmer gravy on low heat for 10 mins.
  • Untill gravy is thickenes slightly and oil floats on the top.
  • Ennai kathirikkai kuzhambu is ready and serve hot with white rice and appalam.

Make slices on the brinjals like this
Dry roast items
Roast it in a kadai
Grind into paste
Then take these items to grind
Add to the blender
Into fine paste
Soak tamarind in warm water
Now add oil and cutted brinjals and toss well
Untill it half cooked
Add masala in a bowl and add salt
Turmeric powder and mix well
In a kadai add gingelly oil, mustard
Add in chopped shallots and curry leaves
Pour in mixed masala to that
Drop the fried brinjal into the gravy
Cook till the gravy became thick
and the oil ozzes out..
 Transfer them to a serving bowl
Enjoy..
