Shami Mutton Kabab


Shami mutton kabab is a delicious non-veg starter dish made with minced mutton. It is an erotic and very popular kabab recipe of india. This particular kabab is perfect to serve either as a great appetizer or as a snack dish. It is a popular awadhi recipe.



Mutton mince mixed with onions and spices to form this delicious shami kababs. My betterhalf  last visit to dubai before marriage and there they went for desert safari. After a ride they got a varity of some delicious arabian dishes in the dinner. He liked a few of them and especially mutton kabab and he was the favourite for this recipe. So he asked me to prepared it at home. And i search some of the recipe and prepared this kabab.

But it would come out very well. I never expect that I got a very good comment from my betterhalf and he enjoyed this dish. so try this execellent and delicious kabab at home and let me tell how it come out.....

Marination Time : 1 Hour
Grilled Time : 25 mins

INGREDIENTS :

Mutton - 150 grams
Mutton fat - 20 grams
Turmeric powder - 1/4 tsp
Onion - 1 (chopped)
Onion paste - 1/2 cup
Ginger garlic paste - 1 tsp
Butter - 20 grams
Chilli powder - 1 tsp
Coriander powder - 1 tsp
Cumin powder - 1/4 tsp
Garam masala - 1/4 tsp
Amchoor powder / dry mango powder - 1/2 tsp
Coriander - few (finely chopped)
Mint leaves - few (finely chopped)
Salt - to taste

METHOD :

  • In a blender add mutton pieces and fat together and add in some turmeric powder and minced it.
  • Then transfer it into the mixing bowl, then add in chopped onion, onion paste, ginger garlic paste, coriander, mint, all the whole spices, and salt. 
  • Atlast add some butter and mix it well and make a dough.
  • Shape into a small round balls. Melt the butter in a tawa.
  • Flatten the balls and place it on the tawa and cover it with a lid.
  • The butter in the kabab melts like water and leave it for 6 - 7 mins.
  • Now turn over the kabab lightly, and again add in a spoon of butter.
  • Close it with a lid and again cook it for 6 - 7 mins. Untill it cooked well and turn into dark brown in colour.
  • Serve immediately with coriander chutney and salad.

PICTORIAL :


Take mutton and mutton fat 
Add in blender
Add in turmeric powder
Grind it
Transfer it into a bowl
For mixing ingredients
Add in chopped onions
Onion and ginger garlic paste
Coriander and mint leaves
Some butter
Mix well like a dough
Shape it into a ball
Flatten it 
Prepare all your kabab like this
Add butter in a pan
Place it on the tawa
Cover it with a lid
The butter melts 
When it absorb and cooked 
Flip over it carefully
Again add some butter 
Cover it with a lid and let it cook for 7 mins in very low flame
It's done
Serve hot
