How To Make Idli Dosa Batter



I wanted to post this idli/ dosa recipe for a long time, but today only got right time with step by step pics. This not a special recipe i wish to have some indian basics in my blog recipe index. Definitely making a soft idli, and crispy dosa for a beginner is a challenging round, so this post is specially for beginners in cooking....



Preparation time : 10 mins
Soaking Time : 4 hours
Grinding time for rice : 15 to 20 mins
Grinding time for urad dal : 15 mins


INGREDIENTS :

Rice - 5 cups

Urad dal - 2 cups
Salt - 1/2 cup
Water as needed

Method :



  • Wash and soak rice for 3 to 4 hours.
  • Wash and urad dal seperatly for 2 1/2 hours.
  • After soaking time, first we are going to grind urad dal so drain water from it.
  • Now turn on your grinder and slowly add urad dal  and sprinkled little water.
  • After adding the urad dal completely keep running for 10 - 15 mins, sprinkled little water.
  • Don't add too much of water in the beginning itself.
  • At the end of 10 - 15 mins the dal will be grinded coarsely. 
  • Transfer the batter into a wide and large vessel .
  • Now on the grinder and add drained rice into it and just sprinkle some water on it and grind it for 15 mins.
  • Don't add so much of water in, just sprinkled water little by little as needed.
  • Once the batter gets smooth, cheak the texture using fingers, the batter should be smooth, silky, but with little grain or fine rava like texture.
  • Now transfer it to the dal mixture and add salt and mix well using hands and allow to ferment for over night or 8 - 10 hours.
  • Now the batter is ready to make idli. and for doda the same idli batter, just add some water and dilute the batter to free flowing consistency.

Pour water, wash and soak it for 2 1/2 hours
And to the dal too
After 2 1/2 hrs drained water from it
Add into the grinder and start grinding
Add very little amount of water
Now the dal is done
Pour it to the large vessel
Now drain the rice
Add to the grinder and grind it
Add very little amount of water
Now it's done
Pour it to the dal mixture
Add in salt
Mix with your hands
Pour to the air tight container
Allow to ferment for over night or 8 - 10 hours.
See how fluffy is this...
Now make soft idli
And crispy dosa
