Kothu means 'mined' in tamil where the small strips of soft and flaky parotta are cooked in the salna which pounding into a mined using the tumbler or spatulla. I serve it with sliced onion and salna.. But you can savor the dish without any accompaniment. It's a dinner on it's own, fulfill with a delicious flavour.
Making kothu parotta using my own recipe, and made this most popular india's street food sucessfully.. Hot n spicy kothu parotta with a cup of hot milk is my dinner yesterday.. It is absolutely delicious and i enjoyed eating every spoon of it.. Friends try this recipe immediately, Tastes simply great.. ok!!

Main ingredients : parotta
INGREDIENTS :
Parotta - 5 (shredded into pieces or shot strips as shone in the in the image below).
Egg - 3
Salna - 1 cup (gravy of chicken or vegetable salna)
Salna - 1 cup (gravy of chicken or vegetable salna)
Onion - 2 (finely chopped)
Green chilli - 2 (finely chopped)
Tomato - 1 large (chopped)
Tomato - 1 large (chopped)
Pepper powder - 2 spn
Salt - as needed
Oil - 4 tbspn
Curry leaves - few
METHOD :
- Take your parotta and shredded them into tiny pieces..
- Heat oil dosa pan or iron griddle, then onion, toss well..
- Add in green chilli, curry leaves and saute on medium flame few mins.
- Add in chopped tomatoes, salt and mix well along with onion
- Make a well in the center and broken your eggs and add in pepper powder and scramble it almost cooked.
- Mix the contents, such that the scrambled eggs mix with the onion mixture.
- Now add the shredded parotta and salna... mix well.
- The content should be minced with a pounding action using the end of the flat spatula.
- Cook it on the medium flame for 5 mins and toss the parotta well. And turn off flame.
- These are mined and mixed by repeated pounding using a tumbler or heavy iron spatula untill it became mined.
- The sound of which can be heard for a long distance.
- Now the egg kothu parotta is ready to serve.
- Serve it with onion and plain salna.
- You can also add mixed vegetables like carrot, beans, green peas, and use veg salna, it is veg kothu parotta.
PICTORIAL :
Take all your ingredients
Heat a iron griddle
Add some oil
Add in chopped onion
Toss well till transparent
Now its' done
Add in chopped chilli
Add in curry leaves
Add in chopped tomatoes
Little salt (adjust the salt and add it carefully)
Mix well for few min
Make a well
Broken the eggs in the middle
Add in pepper powder
Mix well along with onion tomato mixture
Now it's almost mix well
Add in shredded parotta
Mix it lightly
Add in salna
Now time to mix well
Take tumbler or flat spatulla
Do a pounding with a rhyming sound
Upside down
Do this process till it mince well
Makes a semi- gravy mixture
Now it's done
Serve with sliced onion and salna
Enjoy..
